Roasted Rosemary Sweet Potatoes

I wanted a healthy side with the chicken I was making for dinner last night, and have been looking for new ways to include sweet potatoes in my cooking. I tried slicing up some fries once a while ago, but without any seasoning they turned out bland. This time I decided to try olive oil and rosemary.

I sliced up the ptoatoes and added the seasoning.  I put them in the oven at 400 degrees.

After 25 minutes, the potatoes were fully cooked and ready to go.

They came out with just the right amount of saltiness and flavor, and I didn't feel a bit of guilt eating them.  next time I may try using butter or add some extra olive oil because there were a couple dry potato pieces in the mix.  

Roasted Rosemary Sweet Potatoes Recipe


1-2 large sweet potatoes
4 tablespoons olive oil
1-2 teaspoons garlic salt
3 teaspoons rosemary


Heat oven to 400 degrees F. Cut sweet potatoes into 2-3 inch size pieces. Spread out on pan or baking dish sprayed with nonstick cooking spray and toss in olive oil (I'm lucky enough to have an olive oil mister and this is a perfect use). Sprinkle half of rosemary and salt onto potatoes, stir, then sprinkle the remaining seasoning. Cook for 25-30 minutes until potatoes are soft inside.
