Chocolate Chip-less Cookies

Is there a bad time to make cookies? I made the cookies by following this recipe. I chose a recipe with oil instead of butter this time. I'm out of butter right now, so it was the perfect chance to try something different. They are titled chocolate chip-less cookies because that's exactly what they are - my husband's favorite type of cookie is chocolate chip cookies without the chocolate chips, and I aim to please. I also elected to add molasses to the mixture.

I then scooped the dough into cookie sheets and placed them into the oven.

I baked the cookies for 12 minutes to make sure they were fully baked and they came out good. They were perfect to satisfy my sweet tooth. You can definitely taste a difference from the butter cookie recipe, but it's not bad. I would like to try the almond extract next time to see how that tastes, and of course a batch with chocolate chips.

Chocolate Chip-less Cookies Recipe


2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup vegetable oil
1 cup packed brown sugar
1/2 cup white sugar
1 teaspoon molasses
2 eggs
2 teaspoons vanilla extract


Heat oven to 350 degrees F. Mix flour, baking soda, and salt in a small bowl. In a large mixing bowl, beat oil, brown sugar, white sugar, vanilla extract, and molasses until blended. Add eggs one at a time. Gradually beat in flour mixture until well blended. Scoop rounded spoonfuls onto cookie sheets and bake for 8-10 minutes.
