Homemade Turkey Meatballs with Spaghetti

Pasta is one of my weaknesses. And when I make spaghetti, I eat a ridiculous amount.  Tonight felt like a meatball kind of night.  The original meatball recipe I worked from is available here, though I really only used it as a basis for how much seasoning to add.    I've made meatballs before, however usually just mix bread crumbs and some Italian seasoning together and this time I wanted something with more flavor.
I used dried parsley and a mix of Italian herbs (a mix of marjoram, thyme, rosemary, savory, sage, oregano, and basil) instead of just fresh parsley, and also added crushed red pepper because it adds awesome flavor to everything I use it with.  I chopped the onion into bits because I don't have a grater just yet, and parmesan was the only grated cheese I had on hand.  I threw in some pasta sauce for extra flavor and rolled the mixture into large meatballs.  I used the induction cooktop to brown the meatballs in olive oil.

After the meatballs were fully cooked, I poured in the remaining sauce.  I also added 1/4 cup of brown sugar to add some extra flavor.

I served them over cooked thin spaghetti and the meatballs were awesome.  I could taste a bit of the crushed red pepper and the Parmesan cheese was a fantastic addition.  I would love to use fresh herbs next time, and may cut the onion to smaller pieces or use a bit less.  I used a sauce of a different brand than I normally buy because of a sale at the grocery and found it to be a a bit bland (though the brown sugar added just the right amount of sweetness), so next time I will either do a homemade marinara or get another more flavorful brand.  Overall, fantastic!

Homemade Turkey Meatballs Recipe

1 pound ground turkey
1/2 cup chopped onion
1 teaspoon minced garlic
1 large egg
1/4 cup dried bread crumbs
1/4 cup spaghetti sauce
1/4 cup grated Parmesan
1 tablespoon dried parsley
2 tablespoons Italian seasoning
1 teaspoon salt
1 teaspoon crushed red pepper
1/4 teaspoon ground black pepper
3 tablespoons olive oil
1 box spaghetti
1 jar spaghetti sauce
1/4 cup brown sugar (optional)


Combine ground turkey, onion, garlic, egg, bread crumbs, 1/4 cup of the spaghetti sauce, Parmesan, parsley, Italian seasoning, salt, crushed red pepper, and pepper together in a large bowl and stir until fully mixed. Form into 1 to 2 inch size balls and cook in skillet with olive oil over medium-high heat until fully cooked.  Lower heat; add sauce and brown sugar and mix.  Allow meatballs and sauce to simmer on medium-low for 5-10 more minutes minutes.   In a separate pot, boil water and cook spaghetti.  Serve meatballs and sauce over cooked spaghetti.
