Stuffed Maple Syrup Biscuits

I learned a few weeks ago that you can blend cottage cheese for use as as a cream cheese substitute and was thrilled--my husband hates cream cheese with a burning passion and so I've avoided baking with it, up until now that is.

I was home and since it was early in the evening, I decided to bake up something new. I used the Magic Bullet to blend the cottage cheese and, wow, it is a great tasting substitute for cream cheese! I remembered the Brown Sugar Maple Syrup Biscuit Bake recipe from several weeks ago and decided I'd try it again but make some changes.  I mixed less syrup so the biscuits wouldn't be soaked, and decided to try stuffing them with the cottage cream cheese mixture and some if the drizzle.

First, I blended the cottage cheese into a cream consistency, then added a little bit of sugar for the filling.

Then I tracked down the biscuits I had in the fridge.

I flattened out the biscuit dough using my hands until it looked like a small pizza crust. 

I put a small amount of the cream cottage cheese mixture in the center and a little bit of the syrup mixture over it. 

Then, I folded the dough in half and tightly pressed the edges together to seal in the mixture.

I poured half of the butter and syrup mixture in a square pan and placed the biscuits side by side on top.

I added the rest of the brown sugar and cinnamon then poured the remaining syrup mixture over the top.

I baked them for 20 minutes until they were browned. 

They came out having soaked up most of the syrup, and the cheese also had soaked into the inside, rather than making a filling, making for one sweet sugary biscuit. They puffed up quite a bit, I may try thinning the dough a bit more next time but these hit the spot for a quick dessert treat.

Stuffed Maple Syrup Biscuits Recipe


1 can of Grands! Biscuits (I used Buttery Homestyle)
2 -3 tablespoons melted butter or margarine
1/4 cup maple syrup
2 tablespoons honey
1/2 teaspoon vanilla extract
1/4 cup brown sugar
2 tablespoons cinnamon

For the filling:
3 tablespoons cottage cheese, blended to a creamy consistency
2 teaspoons sugar


Heat oven to 375 degrees F. Mix melted butter, maple syrup, honey, and vanilla extract in a small bowl. In a separate small bowl, mix the whipped cottage cheese and sugar. Pour a small amount of the butter mixture into the bottom of a cake pan and sprinkle half the cinnamon and half the brown sugar on top. Take a biscuit and flatten and thin it out so that it looks like a small pizza crust. Put about a 1/2 tablespoon of the cottage cheese mixture in the center, and pour a small amount (about 1/4 to 1/2 teaspoon) of the butter mixture over it. Then fold the dough in half and squeeze the edges together to seal like a calzone. Place in the pan next to each other and sprinkle the remaining cinnamon and brown sugar over the top. Pour the remaining butter mixture over everything. Bake 15-20 minutes.
