Chunky Vegetable and Ground Turkey Bolognese Sauce with Spaghetti


Today I was feeling bit under the weather but that shouldn't stop me from eating some good food. I wanted an easy option and decided on pasta with meat sauce. But how could I make it better without a bunch of work? Toss in some fresh chopped green pepper, onion, and some mushrooms and boom!: awesome chunky spaghetti sauce. I chose to utilize a jar of pasta sauce with this because I wanted a good flavor without simmering the sauce for a long period of time. I made homemade marinara once a long time ago using tomato paste and herbs and found it bland, probably because I didn't let it simmer for long enough. I'll save that for another cooking venture.

I started out by browning the ground turkey in a skillet. Then I added some chopped onion, green pepper, and a can of mushrooms.


Once the onions started getting soft, I poured in the pasta sauce and cooked it over medium heat about another 3 minutes.


I served the finished sauce over warm spaghetti.


The sauce was nothing short of awesome. The mushrooms and onions were absolutely perfect in the sauce. The green peppers were still crunchy, and I mentioned to my husband that I could cook them longer next time, but he said he preferred the flavor and texture of green peppers that aren't cooked until completely soft. I agree that the peppers had a stronger flavor and I really liked that. I definitely want to try a homemade sauce soon using some tomato paste and more vegetables.

Spaghetti & Chunky Ground Turkey Pasta Sauce Recipe

Ingredients:

1 lb ground turkey
1 jar pasta sauce
1/4 cup chopped onion
1/4 cup chopped green pepper
1 4 ounce can mushrooms, drained
1 tablespoon olive oil
1 box of spaghetti

Instructions:

Brown ground turkey in a large skillet. In a separate pot, boil spaghetti. Once fully cooked, drain and add olive oil. Stir in onion, green pepper, and mushrooms and cook 5-7 minutes, until onion is soft. Pour in sauce and simmer 2-3 minutes on medium heat. Serve over cooked spaghetti.
