Swiss Stuffed Chicken Breasts

I've been wanting to make a Swiss cheese stuffed chicken recipe since making the Cheese and Italian herb Stuffed Chicken Breasts recently. I decided to follow the same method of rolling up the chicken since it worked out well before. I picked up some more cheese the other day so today was perfect for some cooking.

I started out by using a tenderizer on the chicken, then placed a slice of Swiss cheese folded in half on one side. I added some garlic powder and Italian seasoning and rolled it up. I placed the chicken breasts in a baking dish and sprinkled bread crumbs a over them.

I put them in the oven for 35 minutes. I was baking Au Gratin potatoes on the side, so they may have taken a bit longer.

The chicken looked delicious when it was finished.

Here's the finished plate with the potatoes. It was the perfect combination. The potatoes were prepared from a box but I'm working my way towards a fresh Au Gratin potato recipe. This chicken was fantastic and so easy. Sprinkling the bread crumbs over the top works out really well!

Swiss Stuffed Chicken Recipe

3 chicken breasts
3 slices Swiss cheese
1-2 tablespoons italian blend seasoning
2 teaspoons powdered garlic
1 cup bread crumbs

Heat oven to 375 degrees F. Place one chicken breast in a large Ziploc bag and use a tenderizer to soften the chicken. Take one slice of Swiss cheese, folded in half, and place it on one side of the chicken. Repeat with remaining chicken breasts. Sprinkle a small amount of garlic and Italian seasoning over the cheese and roll up the chicken breast with the cheese inside. Insert a toothpick to hold the chicken in place. Place chicken in a baking dish and add bread crumbs and a teaspoon of Italian seasoning over the top. Bake for 25-35 minutes until chicken is fully cooked.
