Cheesy Chicken and Herb Bake

I had just finished baking Zweiback bread for a memorial dish called Koliva this weekend (get ready for those posts!), and I wanted something easy for dinner when my husband got home. I decided to make another version of the Parmesan Crusted Chicken again because my husband hadn't gotten to try it last time and it was really just so good.  And since I don't think the name Parmesan Crusted Chicken really applies when I am using so much more than Parmesan, I am calling this version Cheesy Chicken and Herb Bake.  Add some mashed potatoes as a side and you have a delicious dinner.  Ok, ok, they were just instant with a little bit of cheddar cheese mixed in.  Like I said, I wanted easy and delicious.

I first mixed sour cream, mozzarella and Parmesan cheeses, minced onion, garlic, and herbs together in a small bowl.

I set up some chicken side by side in a casserole dish.  They were slightly thawed, just so I could get them positioned in the dish.

Then I placed provolone cheese over all the chicken.

I spread the sour cream mixture on top of the chicken and provolone.

Then I sprinkled some bread crumbs and Italian seasoning over it. I tossed in some Panko bread crumbs for some extra crisp.

I baked them for 30 minutes and couldn't wait to dig in.

It was even better than last time.  The garlic was not overwhelming, I even think adding some minced garlic would add some awesome flavor.  I have a feeling this one is going to become part of the regular dinner rotation.  Next time I am thinking of throwing some lemon juice in the sour cream mixture and maybe some crushed red pepper.  I would like to see how different herbs like rosemary go when mixed in the sour cream mixture, too.  Oh yes, the possibilities are endless.

Cheesy Chicken and Herb Bake Recipe


3-4 chicken breasts
3 slices provolone cheese
1/2 cup sour cream or yogurt
1/2 cup shredded mixed Parmesan & Mozzarella cheese
1-2 tablespoons mixed Italian seasoning
2 teaspoons garlic powder
2 teaspoons dried minced onion
1/2 cup bread crumbs
1/4 cup Panko bread crumbs


Heat oven to 400 degrees F. Mix sour cream, Parmesan and mozzarella cheeses, and 1 tablespoon mixed Italian seasoning in a small bowl. In a baking dish, lay chicken breasts side by side. Place slices of provolone cheese on top of chicken. Spread sour cream mixture over chicken and cheese until they are covered, then sprinkle bread crumbs over the top about 1 teaspoon of Italian seasoning. Bake for 30 minutes until chicken is fully cooked.
