Seasoned Potato Slices

Here's a quick recipe I made to go with the Paprika Parmesan Chicken. I soaked potato slices in warm salt water because I've heard a few times that removes some starch and helps the potatoes get crispy in the oven.

After soaking, I laid the potatoes out on a baking sheet.

I seasoned the potatoes on both sides with salt and pepper, then baked then for 40 minutes, flipping halfway through. I broiled then for about 3 minutes to help brown and crisp them a bit more.

I served them with ketchup and they went over well! They were really crispy and the salt and pepper seasoning were perfect. I can see chili powder adding something great for next time too, but these were great for a quick, baked side dish!

Seasoned Potato Slices Recipe


3 potatoes
4 cups warm water
2 tablespoons salt
1 tablespoon pepper


Heat oven to 350 degrees F. Cut potatoes into thin slices. Soak in warm water with 1 tablespoon salt for 30 minutes. Rinse and drain, then lay out in a single layer on a baking sheet lined with foil. Sprinkle salt and pepper on either side of the potato slices. Bake for 20 minutes, then flip and bake an additional 20-30 minutes. Broil for last 2-3 minutes of baking to crisp.
