Turkey Meatballs



Meatball night! Tonight I did a variation of the Homemade Turkey Meatballs I made before. This time I chopped up a small amount of onion and green pepper to add some fresh flavor. Since adding canned mushrooms worked out well with the Chunky Vegetable Spaghetti Bolognese recipe, I decided to add them again to the sauce.

I mixed the ground turkey, bread crumbs, egg, seasoning, and the fresh onion and pepper together, then formed them into small balls. I placed them in a skillet with olive oil.


I stirred the meatballs frequently, then when they were brown on all sides, added the mushrooms and let them cook for a few minutes.


I added the sauce next and after mixing, covered the pan and let the sauce summer for 10 minutes to finish cooking the meatballs.

The result was an awesome chunky sauce and delicious meatballs. I loved the fresh vegetables in the meatballs-they added a pop of flavor but weren't overwhelming. I'll definitely continue adding vegetables whenever I have them available! I think next time I will try doing a stuffed cheese meatball to spice things up, but for now I'm just excited for leftovers tomorrow!

Turkey Meatballs with Mushroom Sauce Recipe

Ingredients:

1 pound ground turkey
2 tablespoons finely chopped onion
1 tablespoon finely chopped green pepper
1 teaspoon minced garlic
1 large egg
1/2 cup dried bread crumbs
1/4 cup spaghetti sauce
3 tablespoons grated Parmesan
2 tablespoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons olive oil
1 can of mushrooms (4 ounces), drained
1 box of spaghetti
1 jar of spaghetti sauce

Instructions:

Combine ground turkey, onion, green pepper, garlic, egg, bread crumbs, 1/4 cup of the spaghetti sauce, Parmesan, Italian seasoning, salt, and pepper together in a large bowl and stir until fully mixed. Form into 1 to 2 inch size balls and cook in skillet with olive oil over medium-high heat until fully cooked. Add mushrooms and cook for 2-3 minutes, then add sauce and mix and cover.  Allow meatballs and sauce to simmer on medium for about 10 more minutes minutes, until meatballs are cooked throughout.   In a separate pot, boil water and cook spaghetti.  Serve meatballs and sauce over cooked spaghetti.
