Turkey Bacon Wrapped Chicken Breasts

Oh, bacon.  I loved having bacon for breakfast or the occasional BLT as a kid, but since I quit eating pork, I haven't enjoyed bacon in quite a long time.  I picked up a package of turkey bacon at the store after noticing it was on sale since I figured I could do *something* with it, even if just making it for breakfast.

After some pondering on what to make, it hit me...how could I go wrong with cheese, seasonings, bacon, and chicken all in one delicious package?

First, I mixed together some sour cream, shredded cheddar cheese, a little bit of pepper, and fresh chopped parsley from my little parsley plant.

I spread some of the mixture on some chicken, then rolled it up and covered it in 4 slices of bacon, wrapping up all the sides of the chicken and leaving the bacon ends folded underneath.

I arranged the chicken in a glass casserole and popped it in the oven.

After 30 minutes, I had bacon wrapped, cheesy perfection.

Well the rumors are true.  Wrapping meat up in bacon before baking holds the moisture in like a charm.  And the flavor!  My husband took one bite and just said "WOW!"  The sour cream mixture added that awesome bit of cheesiness as well, and I can see plenty of seasoning variations just making this recipe even better.

Whoever invented turkey bacon is really amazing, because now I'm excited for more bacon delights.  BLT sandwiches are in the forecast for the near future, and I know there are countless possibilities for every meal of the day.  If you have any recipe suggestions, please comment below and it may be next in my next baking exploration!

Turkey Bacon Wrapped Chicken Recipe

16 slices turkey bacon
4 chicken breasts
1/2 cup sour cream
1/4 cup shredded cheddar cheese
1 tablespoon fresh chopped parsley
1/2 teaspoon pepper


Heat oven to 350 degrees F.  In a small bowl, mix sour cream, cheddar cheese, parsley, and pepper until combined.  Spread about 1/4 of the mixture on each chicken breast, then roll it up and cover all sides with bacon.  Arrange chicken in a glass baking dish and cook for 30 minutes.
