Seasoned Potato Bake

For Labor Day, I spent some time with the family and decided to cook some Pan-seared, oven roasted steaks for dinner.  I was looking for a creative side dish when I noticed we had a bunch of extra large potatoes waiting to be used.  I've seen recipes for hasselback potatoes before, and decided to try something similar in a baking dish.  What goes better with steak than some potatoes lathered in olive oil, butter, and seasonings?

I used the same technique as I found in a Crispy Potato Roast recipe, but used some different seasonings to kick the flavor up a notch and left the skins on.  I love potato skins!

I sliced some width-wise into thin pieces, and chopped an onion.  I laid out the potatoes in a baking dish and added the onions with it, sticking some onions in between every few potato slices.  In a small bowl, I melted some butter, then mixed in olive oil and parsley.  I poured the mixture over the potatoes and onions, then topped it off with some crushed red pepper, paprika, powdered garlic, salt, and pepper and tossed it in the oven.
I baked the potatoes for one hour, until the tops were crispy and the potatoes were soft in the middle.

Oh yes, these were just right with a steak dinner.  I made these first to make sure they had ample time to cook, and that gave me just enough time to prepare the steaks and get the table set up for dinner.  They were cooked to the point of not being total mush and all of the seasonings blended together for a great flavor.  My family was crazy about them, and the steaks of course since this was the first time I made homemade steak for them. The seasoning possibilities for this dish are limitless--I could imagine some chili powder or cayenne pepper and a little extra crushed red pepper really tasting amazing, or you could use some rosemary on them for a different taste.  Now I'm itching to make some homemade cheesy Au Gratin potatoes too!

Seasoned Potato Bake Recipe


2-3 large russet potatoes
3 tablespoons butter
3 tablespoons olive oil
1 tablespoon parsley
1 tablespoon powdered garlic
2 teaspoons crushed red pepper
2-3 teaspoons pepper
2-3 teaspoons salt


Preheat oven to 375 degrees F. Slice potatoes into thin pieces about 1/8" thick and arrange in a baking dish. In a small bowl, melt butter, then add in olive oil and parsley and stir. Pour the melted butter mixture over the potatoes, then sprinkle powdered garlic, crushed red pepper, pepper, and salt over the top. Bake for 1 hour.
