Oatmeal Muffins

I've been waking up so early lately for my new job that I can't even think of making breakfast in the morning.  So when it came down to thinking of something quick and easy to grab, muffins were an obvious choice!  I've tried making several different types of muffins, but haven't branched out into the oatmeal variety just yet (but the Oatmeal Cookies I baked a while back were seriously awesome).

I found a simple recipe for oatmeal muffins and changed it around a bit, swapping out the white sugar for honey and tossing in a little bit of brown sugar for some extra flavor.  You really only need to read through a couple of my blog posts to discover that I am absolutely crazy about brown sugar.  It makes everything better!

I started out by combining the milk and oats in a bowl and let them soak for 15 minutes. In a large bowl, I beat the butter and eggs together, then poured the oat mixture in and added the honey and brown sugar in.

In a separate bowl, I mixed the flour, baking powder, and salt and whisked (rather than sifting), then stirred it into the batter until combined.

I scooped the batter into muffin tins and baked them for 25 minutes, until the tops were browned.

This was my first time swapping out sugar for honey in a muffin recipe, and the results were very unique.  Rather than being cakey, the muffins stayed very moist in the middle, to the point that I let them bake a bit longer even when they looked done just to make sure they were fully cooked.  My husband said he couldn't even really tell they had oatmeal in them, but that he thought they were really tasty.  I was just glad to have a quick and easy breakfast option.  For next time I think I could healthify (hey, Urban Dictionary has it listed as a word!) them even more and try some whole wheat flour.  Muffins are awesome!

Oatmeal Muffins Recipe


1 cup milk
1 cup quick cooking oats
1/4 cup softened butter
1 egg
1/4 cup honey
2 tablespoons brown sugar
2 teaspoons baking powder
1/2 teaspoon salt


Combine milk and oats in a small bowl an let sit for 15 minutes.  Preheat oven to 425 degrees F.  In a large bowl, beat butter and eggs together.  In a separate bowl, combine flour, baking powder, and salt and whisk.  Add oat mixture and stir, then mix in honey and brown sugar.  Stir in flour mixture until combined.  Scoop into lined muffin pan and bake 20-25 minutes.
