I remember the first time I made these and brought them into work. It was the first time I remember making a baked good that blew people away. My colleagues went crazy for these cookies. The perfect soft cookie, these Chocolate Peanut Butter Kiss Cookies are the things dreams are made of.
Though peanut butter and chocolate have always married well in recipes, the best part about these cookies is absolutely the peanut butter kiss. When you place the chocolate on top of the cookie right after they come out of the oven, the chocolate melts, but only slightly. When the cookies cool completely, you wind up with the chocolate remaining soft, but keeping a slight outer shell. I wouldn't have it any other way, and if every piece of chocolate I ate could maintain that creaminess, I'd be thrilled.
Yes, they are as good as they look. The really cool thing about peanut butter in baked goods is the moisture retention. Butter evaporates liquid pretty quickly, so oil can be used in muffins and such when you want it to retain moisture longer and not wind up turning into a cement block. Peanut butter obviously has peanut oil in it, so maintaining that moisture-holding capability means you've got super soft cookies for longer. Flavor, softness, the perfect melted chocolate kiss...could I really ask for any more? Yes, I could. More of them.
Chocolate Peanut Butter Kiss Cookies
Ingredients:
24 Hershey Kisses
1/2 cup butter
1 cup peanut butter (I used creamy)
1/3 cup light brown sugar
1/3 cup granulated sugar
1 egg
2 tablespoons milk (I used coconut)
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup all-purpose flour
1/3 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
Instructions:
Preheat oven to 375 degrees F. Peel wrappers off 24 Hershey Kisses. In a stand mixing bowl, beat butter and peanut butter until well blended. Add sugars and continue mixing. Next, add egg, milk and vanilla and beat well. In a small bowl, combine flour, cocoa, baking soda and salt; gradually mix into peanut butter mixture. Shape dough into 1 to 2-inch balls and place on parchment lined baking tray. Bake 8–10 minutes. Remove from oven and immediately press Hershey Kiss into the center of each cookie.
