I think we all know burrito basics: protein, rice, beans, and cheese in a tortilla. Leave out the tortilla, maybe toss in some lettuce, and voila: burrito bowl.
As I'd made a trip to my favorite local meat and produce market recently. I had some fresh steak available. I sliced it into chunks to get ready to cook. The best steak cuts for fajitas, tacos, and the like are sirloin and flank steaks. In this recipe, I went with sirloin.
I first chopped up some onion and peppers and heated them in a skillet over medium high heat with some garlic and a little bit of cooking oil. After a few minutes, I added the steak to the pan and then mixed the seasonings in, which was comprised of a bit of cumin, chili powder, salt and pepper. After about 5 minutes, I added in the zucchini and some water, then let it cook for a couple more minutes.
I served this lovely meat and veggie mixture over some cauliflower rice and black beans only to be topped off with...you guessed it...that glorious sauce.

Ah, veggie-loaded burrito stuffing for the gods. The green pepper hot sauce made it next level, of course, adding the spice I was seeking. Top it off with some Cilantro Garlic Sauce for a double win.
This was most certainly a healthier version, with a complete lack of cheese and the use of cauliflower rice. I've been avoiding cheese for personal health reasons, but I highly recommend tossing some cheddar or a vegan shredded cheese in here to amp things up. Ultimately, a burrito is one of those things that can go a million different ways an still be right. So here's a simple little recipe to get you started.
Steak Burrito Bowls Recipe
Ingredients:
1-2 tablespoons cooking oil
1 small bell pepper, sliced thin
1 teaspoon minced garlic (1 garlic clove)
1 small onion, sliced thin
1 pound sliced sirloin steak (1/4-1/2 inch thick slices)1 1/2 tablespoons cumin
1 teaspoon chili powder
Instructions:
2 teaspoons salt
1 teaspoon pepper
1 zucchini, cut into 1-2 inch pieces
1/4 cup water
2 cups cooked rice
2 cups cooked black beans (15 ounces)
Lettuce, if desired
Instructions:
Add oil to a skillet and heat to medium-high. Add oil, then add peppers, onions, and garlic, and cook for 3-5 minutes, until slightly softened. Add steak, then add seasonings and toss to coat. Cook for 5 minutes, stirring occasionally, until cooked to wellness desired (for medium, cook until exterior of steak pieces are browned, about 5 minutes, longer for well done). Add in the zucchini and water and cook for about 3 more minutes, until slightly softened. Serve with rice, black beans, and lettuce, if desired.
