Turkey Meatball Subs

My family was always big on sub sandwiches when we were kids, making Kielbasa with peppers and onions or meatballs and serving them on a big hoagie roll.  Ever since conquering the fantastic Philly Cheesesteaks a few months back, I've known that my next sub sandwich endeavor would be Meatball Subs, and I found the perfect opportunity to make dinner for my sister while also learning to make something new.

I went with ground turkey because I had a few pounds in my freezer, and for the most part followed the Turkey Meatballs recipe I posted a while ago.





I started out by mixing the turkey, chopped onion, bread crumbs, egg, Italian seasoning, and garlic together in a medium bowl.  Next, I formed the meat into balls about 1 1/2 to 2 inches in size.


Next, I heated up some olive oil in a large nonstick skillet and browned the meatballs before adding the sauce.  This helps the meatballs keep their shape when the sauce is added.


I covered the pan and let the meatballs and sauce simmer for several more minutes, stirring every now and again to prevent it from burning to the bottom.


To make the sub, add several meatballs to a hoagie roll and cover with cheese.  To melt the cheese and toast the bread, place in the oven on low heat for a few minutes.  That's if you can resist stealing a bite immediately.


Now this was one of those meals where I ended up so proud of the results.  The meatballs were delicious!  I was concerned there would be too much onion, but since it was cooked just right, it tasted perfect with the sauce.  I cooked this for my sister, and she said they were awesome!  Luckily I made enough to bring a sub home to my husband and he was floored by how great it turned out, too.  I used cuban rolls from the grocery and they were the perfect fit.  My only complaint is that I didn't save any leftovers for myself!  I need to try making homemade hoagie rolls for next time, because there will definitely be a next time for these bad boys.

Turkey Meatball Subs Recipe

Ingredients:

2 pounds ground turkey
1 onion, finely chopped
1 cup bread crumbs
1 egg
2 tablespoons mixed Italian Seasoning
3 teaspoons minced garlic
1-2 tablespoons olive oil
1 jar spaghetti sauce
4 hoagie rolls
8 slices provolone cheese

Instructions:

Combine ground turkey, chopped onion, bread crumbs, egg, Italian seasoning, and garlic together and mix well. Form into meatballs about 1 1/2 inches in diameter. Add in to nonstick skillet heated with olive oil. Cook on medium-high heat for 6-8 minutes, stirring frequently to brown all sides. Add sauce and stir; cover and 7-10 minutes. Cut hoagie rolls open and add meatballs. Add provolone cheese and toast in the oven for 2-3 minutes to melt cheese, if desired.
